My friend Seoyoung took me to one of her favorite cold noodle spots in Seoul. Chewy buckwheat noodles, seasoned with chili paste and topped with marinated skate wing, this dish is fresh, light and hits all the savory hot spots. Korean pear and cucumber offer a bit of cool relief from the spice, and a cup of warm bone broth soothes the mild heat. A large plate of dumplings is a worthy side dish, though Seoyoung later told me her mom's are better. I guess I'll just have to see for myself!
