The tubers are usually a vivid violet-purple to bright lavender in color, but some range in color from cream to plain white.<br/>Chilas can also be made of grated purple yam, as in this recipe. Although it uses only basic ingredients, the Kand Chila tastes awesome when had right off the tava with tongue-tickling green chutney. <br/><br/>Ingredients:<br/>3Purple Yam (peeled & chopped)<br/>Water (as required)<br/>Salt (as per taste)<br/>Coriander Leaves (chopped)<br/>250 gms Gram Flour<br/>1 Onion (chopped)<br/>4 Green Chillies (chopped)<br/>1 tsp Carom Seeds (toasted)<br/>1 tsp Turmeric Powder<br/>1 tsp Asafoetida<br/>1 tsp Garam Masala Powder<br/>1 tsp Red Chilli Powder<br/>Water (as required)<br/>Oil (for shallow frying)
